OLIVE OIL MAKES IT DIFFERENT

Healthy and delicious, olive oil is one of the main ingredients that makes every meal in Andalucia to taste wonderful.

In this region situated in the south of Spain we have been producing olive oil for the rest of the world for thousands of years. Our production was crucial in Roman times, when we exported oil to the rest of the Empire from Hispania. Romans did not used it only in their culinary recipes, but also for beauty purposes, as it being used again nowadays.

The main difference between olive oil and any other kind of oil or butter, is its healthy composition. Olive oil is free of saturated fat, and its  flavor is so delicious that you can take it pure and uncooked in your meals or just on a toast accompanied by prietas as we do here in Arahal.

But do not be wrong, you must always  ask for pure extra virgin olive oil (Aceite de oliva extra virgen), since many companies in
neighbor  countries buy Spanish oil  to mix it with their
local production, and so they  improve the quality
of their oils  to sell them to the rest of the world.

PRIETAS AND OTHER OLIVE VARIETIES

You may think that you have already tried Table olives (aceitunas de mesa), and you have made the decision that you do not like them. But you can not be certain about that until you come to Arahal, the first producer of table olives in the world, and taste them with a cold beer and good food .

Maybe you have tasted the market version of olives, but I am sure you have never tried our handmade specialties made in our town, where we keep the best part of the local production for inner consumption.
First of all, you must know that there are hundreds of varieties of olives over the world, and of all those varieties you will find the finest ones in our  town. Among these varieties you can count Manzanilla olives, so as Durzal, Gordal and Verdial olives, and other minor varieties as Morcaleña and Zorzaleña Olives.

Each kind of olive is elaborated in a particular way; smashed, cut, spiced, in vinegar or just salted, you will find your favorite version depending on your tastes, and depending if you are eating lunch, breakfast or just drinking a beer in the afternoon.

Prietas is a type of dry and deliciously spiced and elaborated kind of olive, they have got nothing to do with the Italian or Greek version of dry olives, since you will only find them in this part of  Spain, accompanying our Iberian breakfast meals. Prietas is a reflex of our culture, that I will deeply explain in other article.
